Increasing Importance of Food Allergies
In recent years, food allergies have been tied to an increasing number of health problems. Approximately 2% of the population is affected by the more well known Type I food allergy that is responsible for an immediate and often severe allergic reaction. It is estimated, however, that up to 40% of the population has a delayed allergic reaction to food (Type III food allergy). A delayed food allergy reaction usually occurs a few hours or even days after a particular food is eaten. This delayed reaction makes it more difficult for an accurate diagnosis of the relationship between eating certain foods and health problems.
